My super easy snack wraps!

A slice of provolone cheese, a slice of Applegate farms roasted chicken breast, and a dollop of bobbi’s roasted red pepper hummus. Easy tasty and healthy!

Quiche! My first one. 

I doubled this recipe, another from vegetarian times, because the original recipe called for phyllo dough which is kind of expensive but premade crusts were cheaper for 2. But I remember how to make just one. 

I left the crust out while preparing my ingredients. I made this the same day as the mushroom sandwich so I used leftover sautéed mushrooms and onions, along with a package of defrosted chopped spinach, a small handful of feta cheese, and some sliced sundried tomatoes. Mix all the veggies and put in the crust.

Then, whisk 2 eggs and 1 cup milk, spiced to taste (I used salt, pepper, a dash of turmeric and cumin, dash of paprika, and garlic powder) and pour into crust. 

Then simply bake at 350 for around 45 minutes or until set.

Mushroom rarebit sandwich! Recipe adapted from vegetarian times.

I sautéed some sliced button mushrooms with sliced onion in a bit of butter and sherry cooking wine. 

Put on toasted organic french bread with a slice of provolone, a sliced half of an avocado, and a smidge of ranch dressing. (original recipe included alfalfa sprouts but I’m not a fan of those)

Overall easy and delicious!

i’ve had much more to do than tumble recently.

first my apartment didn’t have cable for a few months, 

then after i moved back home i’ve been working lots.

i wake up early to run every morning,

and go on bike rides when i go to my moms.

mostly trying to focus on being healthy and happy.
